For the Dad: Strawberry Rhubarb Pie


There is no question about it...my undying...insurmountable...love for flavors and the majesty of food comes from my father. Growing up I never realized how incredibly blessed I was to have parents who cared enough to create homemade and delicious meals for my sister and me. It was clear that meals were not created solely for nutrients, but for love and community as well. I loved hearing stories about family gatherings at my grandmothers filled with love, enchiladas, pork chops and the best fried chicken. She always stood in the kitchen making sure everyone had plenty to eat before serving her self. My dad lives and cooks with the same philosophy of love and unselfishness as she did, always providing delicious, soul-filling meals to those around him.


The LEAST I could do is make him a pie! I chose to make him a strawberry rhubarb pie because of his love of all things southern and classic. He's a whiskey drinking, John Wayne movie watching, Willie Nelson listening, chicken fried steak eating man. And I love him for that. I was nervous about making this pie because of all the mixed reviews I received about rhubarb due to it's tart flavor. The combination of the rhubarb with the strawberries and pie crust created a delicious, balanced flavor. We topped each slice of pie with vanilla ice-cream which made it extra amazing.
